Briohn worked with Roundy’s to design and construct this 59,246 SF grocery store to serve the growing community of Cottage Grove. The team worked through significant grading challenges to create a functional site plan that met Roundy’s concept. Well into the project, Roundy’s changed the store design concept from a Kopp’s brand to a Metro Market brand. Briohn was able to work through the significant design changes and still meet the original completion date. Consistent with the Metro Market design concept, a sushi bar, a wood-fired pizza oven, an extensive wine cellar, and a dine-in cafe were all incorporated into this store.
